For Salad

  • – 2 cups of elbow macaroni
  • – 1/2 cup of diced pineapple for a tropical twist
  • – 1/2 cup of grated carrot for color and flavor
  • – 1/4 cup of finely chopped red onion
  • – 2-3 inches of cucumber (thinly sliced (approximately 5-7 cm))
  • – 1/4 cup of fresh cilantro (chopped for a burst of freshness)
  • – 1/4 cup of green bell pepper (finely diced)
  • – 1/4 cup of red bell pepper (finely diced)
  • – 1/4 cup of black olives for a briny touch

For the Dressing

  • – 1 1/2 cups of mayonnaise

  • – 1 teaspoon of Dijon mustard for added depth
