Homemade Key Lime Cake Recipe

For Cake
- – 1 box of American cake mix (yellow or white)
- – 1 box of bakers’ mixture (lime flavored, if available)
- – 4 teaspoons of freshly grated lime zest for a burst of citrus flavor
- – 1/2 cup (1 stick of unsalted butter, softened)
- – 4 large eggs for a perfect half
- – 1 cup of whole milk
- – A pinch of love (because every recipe needs some)
For Key Lime Glaze
- – 1/2 cup of freshly squeezed lime juice (approximately 3-4 limes)
- – 1 cup of granulated sugar for a sweet and tangy balance
- – 1 tablespoon of freshly grated lime zest
- – A touch of “Brain Flakes” (whipped cream or shredded coconut for added texture)
- Preheat your oven to 350°F (175°C). Grease and flour a 20cm x 20cm (8×8 inches) baking pan.
- In a large mixing bowl, combine the American cake mix, bakers’ mixture, freshly grated lime zest, softened butter, eggs, and whole milk. Mix with a pinch of love until it forms a smooth and flavorful batter.
- Pour the batter into the prepared baking pan, spreading it out evenly.
- Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.
- In a small saucepan, combine the freshly squeezed lime juice, granulated sugar, and freshly grated lime zest. Heat over low heat until the sugar is dissolved and the mixture forms a thin syrup.
