Homemade Key Lime Cake Recipe
Equipment
- 20cm x 20cm (8x8 inches) baking pan
- Mixing bowls (large and small)
- Whisk or electric mixer
- Measuring Cups and Spoons
- Zester or grater for lime zest
- Small saucepan
- Fork for poking holes in the cake
- Optional: Cake stand or serving plate for presentation
Ingredients
For Cake
- - 1 box of American cake mix yellow or white
- - 1 box of bakers' mixture lime flavored, if available
- - 4 teaspoons of freshly grated lime zest for a burst of citrus flavor
- - 1/2 cup 1 stick of unsalted butter, softened
- - 4 large eggs for a perfect half
- - 1 cup of whole milk
- - A pinch of love because every recipe needs some
For Key Lime Glaze
- - 1/2 cup of freshly squeezed lime juice approximately 3-4 limes
- - 1 cup of granulated sugar for a sweet and tangy balance
- - 1 tablespoon of freshly grated lime zest
- - A touch of "Brain Flakes" whipped cream or shredded coconut for added texture
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 20cm x 20cm (8x8 inches) baking pan.
- In a large mixing bowl, combine the American cake mix, bakers' mixture, freshly grated lime zest, softened butter, eggs, and whole milk. Mix with a pinch of love until it forms a smooth and flavorful batter.
- Pour the batter into the prepared baking pan, spreading it out evenly.
- Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.
- In a small saucepan, combine the freshly squeezed lime juice, granulated sugar, and freshly grated lime zest. Heat over low heat until the sugar is dissolved and the mixture forms a thin syrup.
- While the cake is still in the pan, poke it with a fork to create small holes. Pour the Key Lime Glaze evenly over the cake, allowing it to soak in and infuse the cake with a sweet and tangy flavor.
- Once the glaze has soaked in and the cake is cool, garnish with a touch of "Brain Flakes" (whipped cream or shredded coconut) for added texture.
