- Pour the milk into your Instant Pot.
- Set the Instant Pot to "Saute" mode and heat the milk until it reaches a temperature of about 180°F (82°C), stirring gently to prevent scorching. This step will pasteurize the milk and help create a creamy texture.
- Once the milk has reached the desired temperature, turn off the Instant Pot and let it cool down to approximately 110°F (43°C). You can speed up the cooling process by placing the inner pot in a cold water bath.
- In a separate bowl, mix the plain yogurt with a couple of tablespoons of the warm milk to temper it. Then, add this mixture back into the Instant Pot and stir gently.
- Place the inner pot back into the Instant Pot, close the lid, and choose the "Yogurt" function. Set the timer for 8 hours. This is where the love and patience come into play as the live cultures work their magic.
- After 8 hours, your flavorful and presentable homemade yogurt is ready. It will have thickened to your liking.
- If you desire even thicker yogurt, you can strain it through a cheesecloth or muslin for a few hours in the refrigerator.
- Refrigerate your homemade yogurt for a couple of hours before serving.
