- 4 cups Watermelon cubes
- 2 cups Sugar
- 2 cups Water
- 1/4 cup Lemon Juice
- 1/2 tbsp. Black Salt
Cut watermelon into cubes and pat dry with the help of a kitchen towel
Pierce each watermelon cube through the top with a toothpick or wooden skewer. Set aside
Add sugar and water in a saucepan. Mix until well combined. Cook until sugar dissolves, bubble forms, and the mixture becomes golden
Add lemon juice at this stage and insert a candy thermometer. Remember not to skip lemon juice as it prevents crystallization of sugar syrup, and you get a fine crunchy hard shell every time
Heat until candy thermometer temperature reaches to 305F. It is hard to crack temperature-most suitable for perfect candy making.
- You can also cut watermelon in a triangular shape with peels.
- Refrigerate watermelon before coating it into caramel mixture. This step prevents syrup from sogging during the coating of fruit with sugar syrup.
