Ingredients

- Vanilla essence 1 teaspoon
- Honey 1/4 teaspoon.

Caramel Sauce
- Sugar 1 cup
- Cream 1 cup
- Butter 1 tablespoon
Tres Leches
- Condensed milk 1/2 cup
- Evaporated milk 1/2 cup
- Honey 1/4 teaspoon
- Milk 1/4 cup.
- Instructions.
Sponge Cake
- Preheat the oven to 180C for 15-20 minutes.
- Add all-purpose flour, baking powder, cornflour, salt in a bowl and sift for 3-4 times. This step helps to incorporate air in flour, and hence you get light and fluffy cake every time.
- Separate egg white and egg yolks. You can separate with the help of a funnel.
- Beat egg whites first.
- Beat until you turn over the bowl, and egg white does not fall from the bowl. A stiff peak should form for the best results.
- Add 1/4 cup sugar in egg yolks and beat until it gets pale yellow color. Pour vanilla essence, honey, and whisk again for a while.
- Honey gives a delish taste to cakes. You can skip vanilla essence if using honey.
- Mix butter and remaining sugar until the mixture gets smooth and creamy. Add this butter mixture to the egg yolks mixture.
- Fold in flour mix with light hands.
- Lastly, fold in egg whites in 3 batches. Mix lightly to ensure light and fluffy cake.
- Pour batter into a lined and greased Pyrex dish, or you can also bake in a square pan.
- Bake for 35-40 minutes at 180C.
