INGREDIENTS
- Brown rice cooked and chilled 4 cups.
- Green bell pepper 1 cut into thin slices
- Red bell pepper 1 thinly sliced
- Yellow bell pepper cut into thin slices.
- Corn 2 tablespoon.
- Onion 1 small-sized chopped.
- Crushed black pepper 1 tablespoon.
- Rosemary 1/4 cup
- Spinach
- Olive oil 2 tablespoons.
- Garlic chicken.
- Chicken fillets 2
- Crushed black pepper 1 teaspoon.
- Salt 1 teaspoon.
- Garlic paste 1 and 1/2 teaspoon.
- Stuffed peppers
- Green bell pepper 1
- Red bell pepper 1
- Yellow bell pepper
- Chopped onions 1 small-sized.
- Brown rice cooked 1 cup.
- Crushed garlic 1 teaspoon.
- Tomato sauce 2 tablespoon
- Chicken sausages 1/2 cup.
- Pizza or pasta sauce 1/2 cup
- Crushed black pepper 1 teaspoon
- Italian seasoning 1/2 teaspoon
- Parsley 1 tablespoon.
- Shredded cheddar cheese 1/2 cup
Instructions
First of all, we prepare garlic chicken that is super easy to make and tastes divine.
Garlic Chicken
Let’s get started.
- Wash chicken fillets well and pat dry with a kitchen towel.
- Add garlic paste, salt, black pepper, and rub generously on both sides of each chicken fillet.
- Marinate chicken for 1/2 hour.
- Heat oil or butter in a pan.
- Add the marinated chicken, cover, and cook until the chicken gets tender.
NOTE: You can also prepare in the grill pan. The taste will be great whatever cooking method you adopt.
Stuffed Pepper
- Preheat oven to 375 F
- Cut each bell pepper into 2 parts-Cup-like shapes.
- Add chicken sausages, onion, and pizza sauce, diced tomatoes, and cooked rice in a bowl.
- Pour this filling into bell pepper cups.
- Sprinkle shredded cheese. Season with black pepper and oregano on top.
- Bake for 1 minute @375F.
NOTE: You can also grease a non-stick pan with oil. Place bell pepper cups. Cover and cook until the cheese melts. It will take a maximum of 1 minute.
Luigi Italian Rice
- Heat olive oil in a non-stick pan.
- Add crushed garlic and cook until it gets fragrant.
- Add yellow, red, green bell peppers, corn, carrots, and satay on high flame for 1 minute.
- All vegetables should remain crunchy. Do not overcook veggies.
- Season with black pepper, salt and mix well. Sprinkle some rosemary.
- Pour cooked rice, parsley, and mix again until well combined.

RECIPE NOTES:
- You can also make small cubes of cooked garlic chicken and add them to cook rice, give it a stir
- Pizza sauce provides an incredible flavor to stuffed peppers. If pizza sauce is not available, then you can go for pasta sauce. Do add for best results.
